Honey Pistachio, Almond and Lemon Dipped in White Chocolate, Dried Cherry and Almond Biscotti are just a few samples of the absolutely rainbow of flavors you can get Biscotti in. This day celebrates these wonderful treats, and reminds you to try a new flavor, or indulge in your favorite. Biscotti are almond biscuits that originate in Prato Italy, they are the result of a process that leaves them delicious and crunchy, twice-baking. They’re traditionally served in Vin Santo, a sweet white dessert wine. Biscotti were the result of a process that was used to help preserve food for a long time. The cooking process starts with a barely wet dough of flour, sugar, eggs, and unskinned/unroasted almonds, without any form of yeast or fat. This dough is baked once in a slab the shape of the biscotti, and then baked again after being sliced into the signature shape. Besides almonds, they can be made with pine nuts, walnuts, dry fruits, or just about any low-moisture ingredient. Basic Biscotti Recipe you can build on: ½ c Canola Oil 1 c sugar 3 ¼ cups flour (all-purpose) 3 eggs 1 T Baking Powder 1 T Anise Extract Preheat your oven to 375 degrees F, and grease a cookie sheet or line it with parchment paper. In a medium bowl, mix the eggs, sugar, oil, and the Anise extract until it’s blended together. Combine the baking powder and the flour and add the egg mixture until you have a heavy dough. Split it in two and make a roll the same length as your cookie sheet, press it down to ½ thickness, and place in the preheated oven. 25-30 minutes later it should turn a nice golden brown, take it out and let it cool. When it’s cold enough to handle cut it into ½ in thick slices and put back on the baking sheet. Then let it cook for an additional 6-10 minutes until lightly toasted. Thursday September 29, 2016 is World Heart Day. “Heart Day is part of an international campaign to spread awareness about heart disease and stroke prevention. This is the perfect day to quit smoking, get exercising and start eating healthy – all in the name of keeping your ticker in good working order, and improving the health and well being of people the world over. The World Heart Federation have found that heart disease and strokes are the world’s leading cause of death, killing 17.1 million people every year – that’s more than victims of cancer, HIV and AIDS and malaria. Overeating, lack of exercise, unhealthy diets and high blood pressure, cholesterol and glucose levels are all factors which can trigger heart disease and threaten our own lives, and those of loved ones. Heart Day was set up to drive home the message that heart problems can be prevented. The aim is to improve health globally by encouraging people to make lifestyle changes and promoting education internationally about ways to be good to your heart. This lesson is becoming increasingly relevant as reports of obesity, poor diet and physical inactivity in children and young people become more and more common. Events take place to promote healthy hearts. Charities and other organizations coordinate walks and runs, health checks, public talks, shows and exhibitions to name a few of the interesting and informative events which mark the day. We’re embarrassed that it even occurred to us, and worse, that we didn’t know the answer when it seemed so simple. The truth is there is no such thing as a stupid question, except the one that you choose not to ask. We never learn anything if we’re afraid to ask the question to begin with, whether that’s by researching it or asking someone who might know. This day encourages you to overcome your fear of sounding uneducated, and opening yourself to learning by asking your stupidest questions. During the 1980’s a day was created, by teachers, dedicated to letting students ask the questions they were most ashamed of. By making a place that was safe for all questions, they were encouraging them to open up and share their curiosity with the class, without the fear of being ridiculed. The kind of questions that get asked cover an incredibly diverse amount of topics, from the philosophical “What if the hokey pokey really is what it’s all about?”, to the more practical “Is the nose the center of the face?” There’s even more questions that are equally odd like “Why do we press harder on a remote control when the batteries are going dead?” and the humors “What does cheese say when it gets its picture taken?” . This day is celebrated by digging into your brain and asking those questions that occur to you while you’re standing in the shower, or are simply pondering the meaning of life. Whatever it is, don’t be afraid to get out there and ask it and encourage others to do so too. Want to keep it anonymous? You have to be kidding!) and exhausted for dinner. Who has time to cook anymore? Do we even know how anymore? This day reminds us that there’s nothing that quite matches the flavor and comfort of a delicious home cooked meal, and that learning how to cook is an important skill to enhance our health and pass tradition on to our friends and family. It used to be that the home cooked meal was the only meal that was eaten on a regular basis, with take out and fast food being a rare treat rather than a staple of family life. Boxed meals and TV Dinners were equally unheard of, they were the province of the single male or the housewife who just never quite learned how to prepare a proper meal for her family. These days such gender stereotypes may be on their way out, but boxed foods and instant meals are very much more in. It is held on the same day each year to coincide with the birth date of Professor Karl-Axel Ekborn (born 23rd September 1907, died 1977). This eminent Swedish neurologist first wrote and described the disease in 1945. Since then, a lot has been learned about its symptoms although (to date) there is no known primary cause. It may be associated with dopamine or blood iron levels. Characterized by urges to move the legs even when at rest, it can also sometimes occur in the arms. Secondary causes include some medication or other pre-disposing medical conditions. International Awareness Day aims to increase understanding of RLS and the jerky movements and in some cases distress caused. A cure is still being sought. Friday September 23, 2016 is Hug a Vegetarian Day. “It is my view that the vegetarian manner of living, by its purely physical effect on the human temperament, would most beneficially influence the lot of mankind.” – Albert Einstein "There are people in the world who believe that there is no reason that mankind should go on eating animals, and there’s plenty of arguments to support this stance. Both the environment and our health can benefit from excluding meat and animal products from our diets and living on all plant derived food. Additionally, there’s a lot of cruelty in today’s meat industry, and this amount of suffering can be alleviated by fewer people eating meat. This day honors those who have taken this step to live a cruelty free life by removing meat from their diet. The history of this day is tied to the history of PETA, the organization that founded it. For people who don’t know, PETA means “People for the Ethical Treatment of Animals. ”It has grown and become a very well-known symbol for the fight against animal cruelty. Hug A Vegetarian Day was established to show recognition and appreciation for those that have made the, often difficult, transition to a meat free and animal-product free lifestyle. Being a vegetarian isn’t always easy, your food options tend to be limited at restaurants, and there’s a strange social hostility against those who choose to not consume animals. So give these brave souls a hug to thank them for the animal lives they save, and the difficulties they sometimes face in their race to save our animal friends. "With the decline in their habitat, International Red Panda Day hopes to encourage people to learn about these adorable creatures and help save the biome in which they live. These animals spend most of their lives in trees and even sleep aloft. When foraging, they mostly nocturnal but also forage in the gloaming hours of dusk and dawn. Red pandas roam the Eastern Himalayas. These rust-colored creatures are experiencing a loss of nesting trees and bamboo, leading to a decline in the population. With less than 10,000 in the wild efforts are doubled every year to help these little firefoxes! . So head to your local zoo and support those who are helping saves these loveable creatures habitat, but keep your eye peeled they can be hard to spot. Spending a lot of their time in tree’s they are often difficult to see in their enclosures. Red pandas typically grow to the size of a house cat, though their big, bushy tails add an additional 18 inches to their size. Red pandas have a taste for bamboo but, unlike their larger relatives, they eat many other foods as well—fruit, acorns, roots, and eggs. "Since 1982, the International Day of Peace has begun with the ringing of the Peace Bell at the United Nations headquarters, New York. Peace means so much more than an absence of war. More ordinary conflicts arise from disputes with family, colleagues and neighbors and these disturb our sense of peace. Making peace with one person today, even if it is just with yourself, is a fitting way to mark the day. Light a candle, reflect, forgive and enjoy being tranquil. Parents, do you reward your children when they share toys and help each other? Learning how to solve disputes without aggression is a great way to enjoy peace day. "Yar harrr! Ahoy there ye lily livered blaggards! It be Talk Like A Pirate Day, and that means it’s time for pillaging and imbibing of rum! Pirates have been all the rage in recent years, and out of that rage came an insane and completely piratical idea. There should be a day dedicated to keeping the piratical language alive, and more importantly the piratical tradition. It was June 6, 1995, and there was a group of men playing racquetball, and throughout they were shouting encouragement to each other. On this particular day, they started shouting piratical slang at each other. From there it just kind of took on a life of its own, and they realized by the end of the game that it was necessary that they establish a holiday to celebrate that encouraged the use of such a fine vernacular. The first thing they needed was a date; so they selected one. For the next seven years they honored this holiday, in relative obscurity, until they happened upon the email address of one Dave Barry, a syndicated columnist and author of a great number of books. He also happened to be hilarious, like any good pirate should be. From there it’s all history, Dave Barry promoted the holiday, and it’s been one amazing year after another as people all over the country celebrate this auspicious holiday. Celebrating talk like a pirate day be as easy as a day in the tropic, you simply need to turn up your piratical vernacular, pour a few fruity drinks with umbrellas in them, and gather with friends to celebrate the day in your piratey best!
